When I posted my pairing ideas for Tofurky, I mentioned that I would be pairing a Virginia Cabernet Franc with mine and indeed I did. I decided to go with the 2006 Chester Gap Cellars Cab Franc from Rappahannock County near Front Royal Virginia. We visited Chester Gap earlier this year and loved the entire line up that owner and winemaker Bernd Jung had to pour for us. With the 1000 foot elevation, eastern facing slopes and well drained rocky soils, Chester Gap has an ideal location for producing grapes. Bernd believes in the quality of his grapes and thus does as little as possible to mess with them once they come off the vine, having a minimalist approach to winemaking.
Nose – Cherry, raspberry and raw green pepper
Taste – Cherry, earth, spice, fresh herbs and green bean
Mouthfeel – medium body with a good balance of bright acidity and smooth tannins.
Finish – long and fruity with a touch of the green veggie notes coming through
At $22 this is a great example of quality Cabernet Franc from the state of Virginia. It was definitely a Cabernet Franc, lots of herbiness, green vegetables and red fruit flavors that went extremely well with the Tofurky and everything else being served, right down to the sweet potato casserole. For a 2006, the tannins were already very smooth, just a nice leathery feeling towards the end of the finish.
